Basil Pesto

Incredibly easy to grow in Houston for a large part of the year, basil is also one of the most aromatic herbs to use in cooking. When I get huge amounts in the spring and early summer, I make a lot of pesto. It dresses up any light seasonal vegetable or pasta dish, perfect for the season!

Fresh Pesto- Combine 1-2 garlic cloves with 1/4-1/3 cup of nuts (pine nuts, walnuts or almonds all will work) & add an equal amount of cheese (grated Parmesan or Romano) in a mini food processor. Fill with basil and pour about 1/4-1/3 cup of olive oil on top and then blend. If not using the pesto immediately, top with a thin layer of olive oil in a sealed container to keep fresh in the fridge.
